Paul Finn produced his first feature film at age 21 for Kevin Smith’s View Askew Productions. While working on the soundtrack for that film, “A Better Place”, he decided to re-focus on a career in the music industry both as an artist, touring with critically acclaimed bands The Kingsbury Manx and Spider Bags as well as working behind the scenes at the legendary Drag City and Merge record labels.


All the while, bills were paid by waiting tables. The hospitality bug caught on while working at Acme, a fine dining southern restaurant in Carrboro, NC. Starting as a busboy, he eventually worked his way up to GM where he had his first attempts at providing healthcare, convincing the skeptical staff to sign up with Aflac.


Fellow musician and bar mentor Wes Wolfe convinced Paul to pursue craft bartending at the James Beard winning Lantern restaurant in Chapel Hill, NC. It was at the Lantern bar where he read Ted Haigh’s seminal “Vintage Spirits and Forgotten Cocktails” and bartending became his main passion & focus.


Several moves and two children later, Paul found himself in Austin, Texas just in time to help open Garage cocktail bar, winners of the 2015 Official Drink of Austin. Brought on as a principal bartender, he quickly rose to GM and Beverage director.


Under his leadership, Garage has garnered a reputation for providing an excellent cocktail program and warm hospitality, and received national recognition in publications such as Conde Nast, Imbibe, Maxim and Architectural Digest. It was also at Garage that he found a kindred spirit with a shared passion for hospitality and industry wellness in owner William Ball, who made the revolutionary decision to provide full medical benefits for the staff.


In October of 2018, Paul appeared on Damon Boelte & Sother Teague’s “The Speakeasy” podcast in NYC to champion healthcare and wellness for an industry that desperately needs it. These interests organically came together in the form of a system called “Personal Mise En Place” for tracking daily routines and focusing intentionality. January 2019 saw the first public seminar of the “Personal Mise En Place” system at San Antonio Cocktail Conference.
